Topázio is one of our gems. The Cerrado’s red iron-rich soil combined with a young and strong plantation yield delicious coffee beans. Topázio is a cross between Red Catuaí and Mundo Novo, two varietals well adapted to our region. Every year Topázio scores some of the highest BRIX (sugar content) at the farm. Our topázio this year is fruity, slightly citrusy, naturally sweet and with a nice milk chocolate flavor depending on the roast profile. It has become one of my preferred beans.
